Since we think summer should always revolve around sweet corn, here's the perfect duo - a delicious sweet corn recipe that we can’t wait for you to try and a bright, new sweet corn flour sack towel!

I've been feeling the urge to incorporate more Midwest-agriculture themed designs, and this sweet corn towel is the first to come out of that series! Let’s be honest...us Midwesterners LOVE our sweet corn. It pairs pretty great with almost anything you can throw on the grill. Having this tasty side dish so easily accessible June through August is a comforting reminder that summer is amongst us.

his new towel reads ‘Home Is Where The Sweet Corn Is,’ and I think it’s the perfect reminder of growing up in the Midwest; eating ear after ear of corn with our sticky and butter-covered hands as the sun would shine down on our faces, and the sweet, light yellow juice would drip into our laps. It definitely gives a reminiscent feeling that I wouldn’t trade for anything. 

SPEAKING OF SWEET CORN... I wanted to share with you an amazing recipe that a friend of mine shared on her farm to table focused food blog! 

Jessie is an East Coast native currently residing in Northeast Iowa on an old 1,200-acre dairy farm. Four years ago, Jessie, along with her husband, Brandon, and their two dogs, Tater and Drake, quit their jobs, packed up their belongings, and moved to a state they had never even visited before...IOWA! (They couldn’t have picked a better state in my opinion.) 

Her love for food has fueled the fire to share it with those around her. For her, cooking is much more than just combining ingredients together in a skillet. She thrives off of bringing something more to the plate than just food. It’s the swishing of knives, reducing local produce to perfect pieces, and the look on friends’ faces when they see the spread on the table. corn salad

This sweet corn-based recipe is one of the tastiest things I’ve tried in a while. When I tasted it, I knew I had to share it with you all! I also love that this is a recipe that keeps the farmer in mind. So, here it is! INGREDIENTS 

6 Ears of Corn

½ Cup Mayo

½ Cup Sour Cream

⅔ Cup Cotija Cheese

1 Lime

½ Cup Pickled Onions (I found a super easy recipe for this HERE)

½ Cup Cilantro

½ Tsp Chili Powder

Salt and Pepper

HOW TO

1: Cut the lime in half and grill until soft and slightly charred - Remove and set aside. 

2: Shuck and clean the corn and put directly onto the grill. Cook until charred - about 5-7 minutes.

3: Meanwhile, mix the dressing by adding the mayo, sour cream, half the cotija, chili powder,

1 lime half and a pinch of salt and pepper. Smear the dressing onto the bottom of a serving platter.

4: Cut the corn off of the cobb and place on top of the dressing. Squeeze the other grilled lime half over top with a pinch of salt and pepper. Then add the cilantro, pickled onions, and remaining cheese. Serve immediately.
