Have you ever opened your fridge… closed it… and then opened it again like something new might magically appear? Yeah, that was me. I was craving something different, but everything felt the same.

So I just started grabbing things — a little bit of this, a little bit of that — not really overthinking it. And WOW.

Let me tell you, my boys loved this. It’s one of those happy accidents that turns into a go-to. Salty, crispy, creamy, a little fresh, a little sweet — it just all works together in the best way.

Now it’s something I can throw together really easily, especially when I already have little extras tucked away wherever! It’s simple, a little unexpected, and so good.

Ingredients

  • 1 bag kettle chips
  • Salami, sliced
  • Prosciutto, torn into pieces
  • Your favorite cheese or cheese spread
    • I used whipped feta from Trader Joe’s and it was DELISH
  • Finely grated parmesan
  • Fresh arugula
  • Balsamic glaze, pepper jelly, date syrup, or your favorite drizzle
    • I used date syrup
  • Optional: cracked black pepper, hot honey, fig jam, chopped nuts, or fresh herbs

My favorite kitchen besties

Before you start building, lay everything out on a tea towel for a cozy, colorful prep station. A flour sack towel is perfect under your board or tray, and a waffle towel is great to keep nearby for quick cleanups.

If you’re serving these for friends, pair the nachos with the cutest mugs, and use a Swedish dishcloth afterward to make cleanup easy. Bowl covers are also handy if you prep toppings ahead of time and want to tuck them in the fridge until guests arrive.

Instructions

  1. Start with the chips.
    Spread your favorite kettle chips onto a serving board, platter, or shallow tray. I love kettle chips here because they’re sturdy enough to hold all the toppings.
  2. Add the charcuterie.
    Tuck salami slices and torn pieces of prosciutto throughout the chips. Try to spread them evenly so every bite gets a little something savory.
  3. Add the cheese.
    Dollop your favorite cheese spread over the chips. I used whipped feta from Trader Joe’s, and it was so creamy and delicious with the salty chips. Sprinkle finely grated parmesan over the top for extra flavor.
  4. Top with arugula.
    Add a handful of fresh arugula. It gives the whole platter a peppery, fresh bite and makes everything feel a little lighter.
  5. Finish with a drizzle.
    Drizzle with balsamic glaze, pepper jelly, date syrup, or another sauce you love. I used date syrup, and it added the prettiest little sweet note.
  6. Serve right away.
    These are best enjoyed fresh while the chips are still crisp. Set them out on a pretty towel-lined table, pour a few drinks, and let everyone dig in.

Extra Tips!

This is one of those recipes where you really can’t mess it up — it’s just about what you’re in the mood for or what you happen to have on hand. If you’re craving something a little sweeter, I love adding a spoonful of fig jam or a drizzle of hot honey.

Even a few sliced strawberries tucked in there can make it feel extra special. If you want a little crunch (which I almost always do), sprinkle on some chopped pistachios, walnuts, or almonds. It adds just enough texture to make each bite more fun.

And if you’re making this for a group, I like to turn it into more of a full board.

I’ll pile the chips in the center and then build it out with extra meats, cheeses, fruit, olives... whatever I have tucked away. It’s such an easy way to make it feel abundant and welcoming without a lot of extra work.

Honestly, this is one of those “use what you have” moments that somehow always turns into something everyone gathers around.
