Is there anything more HEARTWARMING than the smell of toasted butter and peanut butter wafting through the house? I’ve been spending so much time in my kitchen lately, and while I love a fancy bake, sometimes I just crave those simple, nostalgic flavors that make a house feel like a HOME.

These Browned Butter Peanut Butter Rice Krispie Bars are my absolute go-to when I want to whip up something special but easy. I’ve made these so many times for my boys, and let me tell you... they disappear in seconds!

I just know your kids (and the grown-ups, too!) would absolutely LOVE these. There is just something so cozy about a treat that’s made with a little extra love.

Why I Love This

I’m all about those "elevated" details that make a recipe feel like a warm hug:

  • The Browned Butter: I don't just melt my butter; I let it get dark and nutty. It makes the whole kitchen smell like a dream!

  • The PB Love: I’m a "more is more" kind of girl when it comes to peanut butter. I use a full cup to make these extra rich and creamy.

  • The Gooey Centers: I always save a cup of marshmallows to fold in at the end. My boys love finding those little "marshmallow clouds" inside!

BROWNED BUTTER PEANUT BUTTER RICE KRISPIE BARS

Ingredients

The Cereal Base

  • 6 cups Rice Krispies cereal (I love that classic crunch!)

  • 7 cups miniature marshmallows (Separated into 6 cups and 1 reserved cup)

  • 1/2 cup (1 stick) unsalted butter (High quality makes a huge difference here!)

  • 1/4 tsp sea salt (To balance all that gooey sweetness)

The Creamy Center & Topping

  • 1/2 - 1 cup creamy peanut butter (I always lean toward the full cup for my boys!)

  • Extra peanut butter for drizzling or spreading on top (Optional, but highly recommended!)

Instructions

1. Prep Your Pan

Line an 8x8-inch baking pan with parchment paper. I always make sure to leave about an inch of overhang on the sides... this creates a little "sling" so I can lift the bars out perfectly later without them sticking!

2. Brown the Butter

In a large stockpot or heavy-bottomed saucepan, melt your stick of butter over low heat. Once melted, turn the heat up to medium.

Stir constantly for about 7 to 10 minutes. You’ll see it start to foam, and then those little brown bits (the delicious milk solids!) will settle at the bottom. Once it turns a deep golden brown and smells like toasted nuts, it’s ready!

3. Melt the Marshmallows

Immediately turn the heat back down to low and add 6 cups of the miniature marshmallows and your sea salt. Stir continuously until the marshmallows are completely melted and have become a smooth, golden-ribbon consistency.

4. Combine and Fold

Remove the pot from the heat immediately so the sugar doesn't get too hard. Gently stir in your Rice Krispies cereal until every piece is tucked into that marshmallow coating. Now, fold in your creamy peanut butter.

MY PRO TIP: Be gentle! I use a large spatula to fold rather than stir vigorously; I want to keep the cereal light and airy, not crushed.

5. Layer with Love

Scoop about half of your mixture into the prepared pan. Lightly grease your fingertips or a spatula with a little butter and press the mixture evenly into the corners. Sprinkle your reserved 1 cup of mini marshmallows evenly over the top. This creates those "marshmallow clouds" my boys look for!

6. Press and Set

Add the remaining cereal mixture on top. Press down gently to create a smooth, even layer. If you're feeling extra indulgent, spread a thin layer of additional peanut butter over the top while it's still warm!

7. Rest and Serve

Let your bars sit at room temperature for at least 1 hour. I know it’s hard to wait when the kitchen smells this good, but this ensures they set up perfectly! Once firm, use your parchment overhang to lift the whole block out, slice into squares, and enjoy!

My Storage Tips for the Softest Bars!

I always say the only thing better than a fresh Rice Krispie bar is one that stays soft and gooey the next day! If you’re like me and want to keep that "just-made" texture for as long as possible, here is how I handle my leftovers:

  • Room Temperature is Best: I never put these in the fridge! The cold makes the butter and marshmallows turn quite hard. I keep mine on the counter in a cool, dry spot.

  • The Bread Bag Hack: You might be wondering.... CAN I STORE THESE IN MY BREAD BAGS? The answer is a huge YES! Since our fan-favorite bread bags are designed to keep moisture in and air out, they are actually perfect for these bars.
    I just slice them up, stack them (maybe with a little parchment paper in between if they're extra gooey!), and slide them right in. It keeps them so soft and fresh!

  • The Bowl Cover Method: If I’m keeping them right in the 8x8 pan, I just pop my 10.5” Bowl Cover over the top. It creates a great seal and looks so cute sitting on the counter.

  • Freeze for Later: If you want to hide a batch from the kids (I won't tell!), these actually freeze beautifully. I wrap them individually in parchment paper and then put them in a freezer-safe bag. Just let them thaw on the counter for about 30 minutes before you're ready to snack!

My Kitchen Favorites

Baking is always more fun when my kitchen feels as good as it smells! Here’s what I’m using today:

  • Life of a Bread Baker Waffle Towel: I love the texture of this one! It’s so soft and adds such a cozy touch to my counter!

  • Swedish Dishcloths: My absolute FAVORITE for cleaning up sticky marshmallow fingers. Just a little hot water and I'm good to go!

  • 10.5” Bowl Cover: I pop this right over my pan. It keeps these bars so fresh and soft for the next day (if they last that long!).
