I’m not sure about you, but I spend a lot of time trying to figure out how I can save time… a little contradicting, I know! But there’s only so much time in a day, and any extra time that I can find to do the things that fill me up with joy, I’ll definitely take. 

When you find that perfect solution to getting out of the house a little quicker in the morning so you can enjoy those 10 extra minutes of sleep, or you find a shortcut to work that cuts time off your commute and lets you stay home a couple minutes longer with your dog, that’s definitely a win in my book.  
I have another little win for you that can help save you time at the grocery store and in the kitchen. You won’t be searching for 20 plus ingredients all over the store for this one. This mouthwatering recipe takes minimal, super easy ingredients, and will have you enjoying more time in the living room with your family while this deliciousness bakes.

There are plenty of chicken-based recipes gracing the internet, our cookbooks and our grandma’s recipe box, but I’m going to be honest - this is one recipe you probably aren’t expecting. It has a unique curry-flavored twist to it and it’s one of my favorites. Cue… the curry chicken and asparagus dish that will have your family asking for seconds.

This curry chicken and asparagus recipe is a tasty, time-saving dish that has me reminiscing on my childhood. I grew up in northwest Iowa, and what many people don’t realize is that asparagus grows in the ditches! So, every spring as I grew up, my dad would drive the two of us around in his John Deere Gator, and we’d pick asparagus together. 

Even though I’ve moved away from this part of Iowa, and have found a new place to call home, my husband still helps me continue this tradition. We make trips back to these same ditches nearly every spring to pick asparagus and then freeze it for the rest of the year. 

So here it is, a springtime dish that incorporates chicken, curry, and asparagus, just in time for you to try it out this spring!

Curry Chicken & Asparagus Recipe

Ingredients:

1 1/2 lb. raw asparagus

(frozen works too)

4 whole chicken breasts

1/2 cup mayonnaise

1 can cream of chicken soup

1 tsp. lemon juice

1/2-1 tsp. curry powder

1-2 cups shredded cheddar cheese

 

Directions:

Preheat oven to 375 degrees. Sear chicken breasts in a skillet. Place asparagus spears in a greased 9x13-inch pan. Top with chicken. Season with salt and pepper. Mix mayonnaise, cream of chicken soup, lemon juice, and curry powder. Spread on top of chicken. Bake for 40 minutes. Top with shredded cheddar cheese and bake for 5 more minutes until cheese is melted.

I hope you love this recipe as much as my family and I do. And I hope that with these seven simple ingredients, you’re able to save a little time in the kitchen and spend a little more time enjoying family. Or, if you’re anything like me, this extra time probably means you’ll be spending it cuddling your dog on the couch, which is always a win!
